HONEY SYRUP

1 cup 100% pure honey

1 cup water

Heat honey and water in a saucepan over medium heat.  Stir constantly until honey is completely dissolved without bringing to a boil.  Remove from heat and let cool.  Transfer honey syrup to a bottle or container with a tight fitting lid.  Store in the refrigerator for up to 2 weeks.

Yield: 1 ½ cups

Saltzkartoffeln (Salt Potatoes)

This is my family’s favorite way to eat potatoes especially when the dish you’ re serving them with has some type of sauce or gravy They come out of the pot all broken and fluffy around the edges. Save any
leftovers for a quick potato salad or a simple midnight snack with mayo.

3 large baking potatoes1 peeled
3 tablespoons coarse sea salt
Water

These are easy and fantastic. Cut peeled potatoes into large chunks and place in a large pan with well fitting lid. Add just enough water to cover the potatoes and add the salt. You want the water to taste like the ocean. Boil uncovered until the potatoes are just knife tender. Drain away salt water and put the lid on the pot. Hold the lid tightly in place and vigorously shake the pot about 5-6 times, Remove the lid and cover the pan with a towel until ready to serve.
